About the Coffee:
This microlot made from red-fruited Pink Bourbon, undergoes extended anaerobic fermentation for 120 hours at 18°C with CO2 injection, followed by an additional 72 hours of fermentation with dried red fruits and fruit glucose. The result is a deep floral and fruity symphony, with notes of strawberries, cherries, dark chocolate, and winey undertones.
